Panir is an Indian soft homemade cheese

Panir is an Indian homemade cheese that tastes like Adyghe cheese. Panir is made from milk, so it is rich in easily digestible protein. This cheese is low in calories, contains a lot of calcium and phosphorus. The composition of the breadcrumbs does not include rennet, preservatives and dyes, as in purchased cheeses.

Panir quickly restores energy and strength.

To prepare 1 kg of cheese you will need:

1. milk (4-5% fat) - 4 liters
2. lemon (lime) - 1 pc
3. salt (optional)
4. spices (optional)
5. greens (optional)

Method of preparation of breadcrumbs:

* Pour the milk into a large saucepan and set on fire. Add salt, selected spices (turmeric, pepper, paprika, curry), herbs (basil, parsley, marjoram, rosemary). Before the milk boils, squeeze the juice of half a lemon (lime). If you do not have a lemon on hand, replace it with half a teaspoon of wine vinegar or citric acid, pre-diluted in warm water.
* Stir the resulting mixture with a wooden spatula, and when it boils, pour in the juice of half a lemon (lime).
* Milk will gradually coagulate. It will break down into a translucent liquid (whey) and lumps of cheese.
* Prepare a container and, carefully mixing the resulting mass and removing it from the heat, pour it there through a sieve and 2 layers of gauze.
* Allow the serum to drain. Whey can be used to make pancakes, add to stewed vegetables or make a soup base.
* Tightly wrap the edges of gauze and wring out excess water. Transfer the cheese to a deep or flat plate, cover with another plate and place the load on it.
* If you like the delicate soft taste of cheese, keep the load for a short time (10-15 minutes), and if more dense - up to 30 minutes.

Panir is combined with a lot of sauces, spices and herbs. It is fried in dough, stewed with vegetables and rice, added to salads, desserts are started.
